Carrots are root vegetables, usually orange in colour.  It is considered to be one of the world's healthiest foods, rich in anti oxidants (beta carotene). 

Carrots prefer full sun when planted, and do well if planted in areas that have summer rainfall. 

It has a crisp texture when fresh. Carrots are widely used in many cuisines, especially in the preparation of salads.

In South Africa we use it in stir-fries, as a pulp in baby foods and by cooking it in soups and stews.

The sweetness of carrots allows the vegetable to be used in some fruit-like roles. Grated carrots are used in carrot cakes, as well as carrot puddings.

Carrot juice is very popular, especially as a health drink, either stand-alone or blended with fruits and other vegetables.
